Blueberry Zucchini Bread

My husband is the King of trading or bartering. He has taught me so much about this way of life. If I can trade for it I do. Bartering is the idea of trading goods or services for goods or services without the use of money. Doesn’t it sound fantastic??? Believe it or not more people are inclined to this idea then you would think.

This past year has been so busy with my soap making business that I fell behind on planting my veggies this past spring so I had to forgo a lush crop mid summer. Lucky for me I have a dear friend at church who did have time to plant her garden and I’ve been able to reap the benefits of it.

I was able to trade my soap for some fresh veggies. In addition to tomatoes she brought me this. . . 11884975_464379653721864_478652885564151965_oNotice sons face. He was not amused that I made him hold the zucchini for me for perspective. lol

So what did I do? Made bread of course.

It was a busy morning shredding and more shredding. I wasn’t sure if the kids and the Mr. would like plane zucchini bread so I searched the internet and found a wonderful recipe for Blueberry Zucchini Bread at allrecipes.com < find it there.

The recipe calls for three cups of all purpose flour but I decided to use one cup of all purpose flour and one cup of wheat flour. The bread came out better than I expected. The kids and the Mr. loved it.

Apparently it was so good the dog eat half a loaf himself.

Glad I made five. 🙂
